Danish Peppernuts (Pebernødder)

Ingredients:
125g soft butter
125g sugar
1 egg
1 tsp baking soda
1.5 tsp ginger
1 tsp cinnamon
1 tsp Cardamom
1/4 tsp white pepper
250g Flour

Method:
Mix soft butter and sugar well together in a bowl. Add egg and mix it until it’s absorbed into the butter. Mix baking soda, spices and flour in a seperate bowl and add it in. Knead until the the dough is fine and smooth. Roll the dough into finger-thick sausages on a floured table, and cut them into small pieces of ½-2 cm long, depending on how big or small you want them.

Preheat the oven to 200˚C on bake, or reduce to 180˚C if using fan bake. Roll the peppernuts round (or leave them as they are depending on what shape you want) and place them on a baking tray lined with baking paper. Bake the them for 10-15 minutes in the middle of the oven, until golden brown. Keep an eye on them as every oven is different and depending on your rolled out size, they might need more or less time. Take out and leave them to rest.
 
Tip: This recipe makes around 100, but you can easily double it to make more :)
