Dreamcake

Ingredients

300g sugar
4 eggs
1/2 tsp vanilla paste
280g flour
3 tsp baking powder
200ml milk
65g butter

Topping
125g butter
175g shredded coconut
250g dark cane sugar (or brown sugar)
100ml milk

Method
Whisk (or beat) vanilla, sugar and eggs together until fluffy.
Mix baking powder and flour together and mix it into the wet ingredients using a sieve so the flour does not clump. Cut the butter into cubes and heat it in a pan or microwave with milk. Once the butter has melted, mix it into the dough and pour the whole mix into an ovenproof baking tray lined with baking paper.

Bake the cake for 25 minutes in a preheated oven at 175 degrees hot air until almost done.

While the cake is in the oven you can make the topping. Put shredded coconut, butter, milk and dark cane sugar (or brown sugar) in a pot and bring to the boil while stirring. When the cake is done, take it out of the oven, and turn the oven up to 225 degrees. Spread the filling over the cake and put it back in the oven for another 5 minutes. Let the dream cake cool fully, and then place in the fridge for half an hour (this will allow you to cut perfect squares) and enjoy!

Tip: Serve the cake with greek yoghurt, whipped cream or vanilla ice cream.
