Vegan Dahl

Ingredients

2 garlic cloves
5 onions
350g can of tomatoes
200g red lentils
500ml water
350ml can of coconut cream
Lemon juice to taste
Freshly grated ginger to taste
Oil
Salt and pepper

Spice Mix

1 tsp pepper
1 tsp cumin
1 bay leaf
1 tsp cardamom
1 tsp cinnamon
1 tsp ginger
1/2 tsp ground clove
1 tsp all spice
1 tsp of chilli powder

Toast the spice mix and tomato puree in a dry pot for a minute before adding oil, finely chopped garlic and onion. Let it simmer while stirring. Rinse the red lentils in cold water and add them to the pot . Add coconut cream, water and simmer for 30 - 45 minutes. When the lentils are tender, season with grated ginger, lemon juice, salt and pepper.

Serve with a side of rice or enjoy it on its own.

Tip: Serve it with a homemade beetroot chutney or an Indian pickle and a slice of sourdough bread.
